Banana Bread
This banana bread has raw kefir for its yeast strains acting like a sourdough starter/yeast. Read this blog for more info on using raw kefir as a riser.
Ingredients
300g banana
4 pasture-raised eggs
1 teaspoon organic ceylon cinnamon
10g raw honey or maple syrup
85g coconut flour
55g raw kefir
5g ghee or butter
Topping:
Sliced banana (thin & horizontally)
Raw Honey or maple syrup
Directions
Combine all ingredients and mix thoroughly.
Let this bowl rest while you prepare the toppings and line the dish. Take your time to allow kefir to act on the other ingredients (20+ mins).
Line a glass bread loaf dish with unbleached parchment paper.
Evenly pour in batter.
Top with cinnamon, banana slices, and raw honey or maple syrup.
Bake at 350F for 45min, or until toothpick comes out clean.
Let cool then refrigerate over night before serving.
Slice and serve with raw butter.
Notes
Must use RAW kefir. Most store-bought kefir does not contain yeast. They use a special blend of probiotic strains; mostly void of the yeast strains to avoid busted bottles!
