Pumpkin Waffles
Start a morning off right with a stack of these pumpkin waffles.
Ingredients
⅓ cup coconut flour
¼ cup pumpkin purée (roasted yourself or canned)
6 pasture-raised eggs
2 tablespoon high-quality fat (butter, ghee, tallow, lard, coconut oil)
2 tablespoon maple syrup or raw honey
½ teaspoon unrefined salt
1 teaspoon pumpkin spice, optional (or ¼ tsp cinnamon, ¼ tsp ginger, ¼ tsp nutmeg, ¼ allspice)
Directions
Preheat cast-iron waffle iron.
Grease generously with fat of choice.
Whisk together dry ingredients, then whisk in wet ingredients.
Use a small ladle to pour the batter onto the iron.
Cook 3-4 minutes, or until golden brown.
Serve with raw butter and sweetener of choice.
Notes
Make savory by adding meat and/or herbs.
Pancakes work great as well.
If too runny (coconut flour is finicky) add more coconut flour.
If too dry, add more pumpkin purée.
